Is there some sort of service that pairs visitors to Tuscany with local families with whom they can interact?

No, not that I know of unless you are a student, I know some of the universities do that to enrich the experience of students being her for a few months. Some of them have them stay with local families, while many just allow students to stay in apartments on their own.
