Florence to Lucca by car

You most definitely can!
The best solution is to map directions from one city to the next between Florence and Lucca, choosing a route through places you might also be interested in stopping in. This is just one suggestion:
Florence - Poggio a Caiano - Vinci - Montecarlo

The last part still has you get on the toll road from there to Lucca because Google Maps wants to take you on the fastest route but if you follow signs for Lucca and not the A11/E76 road you will go along the country roads.
