Help with itinerary - eight days

Advise please for two young ladies - train from Nice to Monterosso (two or three nights)
Then train to Florence eventually but would like to see Lucca, Pisa, etc... maybe Sienna
en route to Florence - should they spend the night in one of these smaller towns?
Also how to see Chianti region en route or from Florence. A particular winery? Or eats?

Then maybe four nights in Florence.
Advise/suggestions/comments or recommended accommodations appreciated.

Your plan looks good. I would also advise to visit the Val d'Orcia part of Tuscany (south) if you have time, especially places like Pienza, Montalcino (Abbazia di Sant'Antimo nearby), Montepulciano..etc. This can easily be done in one day if you rent a car.

if you are arriving from Nice you can surely relax at the CINQUE TERRE for a couple of days/nights.
On the third day you can head to Pisa by train and spend half day there to visit the Field of Miracles.
Then take the train to Lucca for the overnight.
You'll love Lucca also in the evening. Lucca is a delightful small town, you can walk till late without problems. Make sure you can book an accommodation inside the town walls to maximize your time for sightseing.
The following day you can complete the visit of Lucca hiring a bike along the ramparts of Lucca and touring easily along the 4km long ramparts. You may climb the medieval Torre Guinigi which is the one an only tower which has trees on the top! You'll love the view from up there!

In the evening you may take the train again to Florence (circa 1.5hours).
I would suggest you a central accommodation to have the best facilities and strategic position for your next move.

In Florence there are lots of interesting ways to visit the craddle of the Renaissance.
Focus on the markets, climb to the top of the tower of PALAZZO VECCHIO

It is surely worth to spend 3 nights in Florence: your time will fly while you are strolling, shopping, touring, visiting museums or simply enjoying the Florentine evening lifestyle.
Also Florence is a secure town, don't worry if it is only the two of you walking along the alleys...breathe history and charme..you'll love my hometown!
As far as EATS: well, in Florence we have lots of great options for ice cream shops, small wine bars, historic shops, traditional restaurants.

After Florence:
you can tour Chianti on the way to Siena to finish your holiday with the most relaxing part of Tuscany.
You may stay in Siena for a couple of nights and tour the sorroundings like Montalcino or Pienza or Montepulciano.

2 nights CINQUE TERRE
1 night in LUCCA
3 nights in FLORENCE
2 nights in Siena

The two young ladies could do the 2-3 nights in Monterosso to see the Cinque Terre but also Levanto and Portovenere.

Then Lucca on the route to Pisa, seeing both in one day but staying overnight in Pisa.

Then on to Florence, to use as a base for the 4 days. From Florence, they can take a bus to Siena for a day trip and another whole day in Chianti - I'd suggest, since they won't be renting a car, to do a guided tour such as the ones offered here. There isn't a good way to see Chianti without a car so the guided tour is the next best thing, for a one day (or half day) trip.

Val d'Orcia is nice but further away from Florence and difficult to see without a car. If they wanted to fit it in, I'd suggest doing 2 full days in Florence, then 2 days with Siena as their base and using Siena as the departure city for a trip to Val d'Orcia, once again depending on a guided tour such as one of these.
