Many restaurants offer vegetarian dishes, although choices can be limited mainly to the "primi" or first courses. There are definitely traditional Tuscan dishes you should try!
All pizzerias will have vegetarian options, starting with the most traditional "margherita" pizza to pizzas with just vegetable toppings - most will have a list of the toppings but if in doubt, ask the waiter who can clear up any doubts
Getting back to traditional restaurants, the "trattoria" or "osteria" will offer local dishes you should definitely try -- a few suggestions of some delicious traditional dishes:
pappa al pomodoro (bread soup with tomatoes, onions and very good basil and olive oil) and
ribollita (vegetable soup with bread, called "reboiled" because it gets better the more times it is reheated) as well as
pasta with truffles or porcini mushrooms and
tortelli with ricotta and spinach in tomato sauce. That combination of ricotta and spinahs is very popular in Florence and Tuscany: Florentine "crepes" (
crespelle in Italian) are filled with ricotta and spinach and covered in a smooth, velvety bechamel sauce. Take a look at the menus generally located outside the restaurants, you'll find several offerings for vegetarians
Note: Closer to Siena, try the
Pici all'agliata - handmade spaghetti with a tomato sauce and lots of garlic - delicious!!
As for restaurants dedicated just to vegetarians, in Florence the most popular one is called
Il Vegetariano on Via delle Ruote - their website has some info on the dishes and location:

Another more recent place catering to vegetarians and vegans is called
La Raccolta and a bit further out from the main historical center. You can view their location and some reviews on the
