Since you're interested in getting married in a Catholic church, then I will assume you are Catholic. The easiest way to start this process would be to go to your parish and ask them the general requirements for getting married in their parish and then ask about doing the ceremony in Florence, asking them whether they can assist you with the arrangements. When I got married here in Florence, I actually wanted to get married in a small parish outside of the city and I still had to go to my local neighborhood parish and meet up with them, hand over all the paperwork, set up the marriage counseling meet ups with the priest, etc. Then they handled the paperwork of letting us get married in a different parish -- so I am assuming that it will likely be similar for you where you live.
Start with them and ask for assistance, because in addition to the church requirements, you will also need someone who speaks Italian to help you out --- and the church here asks for all the legal paperwork because getting married in a Catholic church in Italy also gets you officially married civically (special contract between the Church and the Italian State) so you don't actually have to do both! Your marriage will be registered in local city register and then you can have it officially transferred back to your home state.
It isn't super complicated but you do have to follow all proper paperwork trail and line it all up so that it gets done in the right time - and in Italy, everything will be in Italian. Many do get local wedding planners for assistance for this particular aspect, so that's another avenue to check out if you don't want to do it on your own.
