Christmas Eve in Chianti area

Yes, everything is open on Christmas EVE but will be closed on Christmas DAY so make sure to plan ahead. Restaurants will also be open on Christmas Day, shops might close a little earlier on Christmas Eve so plan on groceries or shopping earlier in the afternoon.
As far as wineries, many only open during December and winter months with advanced booking so I would recommend you look at possible wineries and contact them ahead of time to book a time for your visit, that way you're sure you get to visit them.

That sounds like a fantastic trip! Many shops and restaurants in Chianti may have limited hours on Christmas Eve, but some should be open, especially in larger towns like Greve.
