Detailed maps needed

My wife and I are planning a cycling trip in Tuscany and Umbria but the most detailed map I can find is Michelin's at 1:200,000. What company makes a more detailed map? We would much rather ride on rural roads than the more busy direct roads.

They make hiking maps with all trails across Tuscany at scale 1:25,000 which are perfect for cycling as well, particularly on off-road trails -- you'll just have to decide which areas you're going to be in, since it means a lot of maps for Tuscany.
