We are planning a 6-day Tuscan trip with 6 adults from late October to early November, starting and ending in Bologna. Our list includes Bologna, Florence, Siena, Lucca, Pisa, Volterra, Montepulciano, Montalcino, San Gimignano, Chianti, Pienza, Val d'Orcia, Cortona, and Arezzo. However, we know we can't visit them all. Which ones do you think we absolutely must see, and which ones should we skip? (Florence isn't a must-see as everyone in our group has already visited it.)

Lucca is excellent, though not near most of the cities on your list. Also, be aware that Lucca hosts ComicCon around your dates. The city is less enjoyable around that time, due to the influx of numerous white tents and huge crowds. This interferes with the quiet ambiance of the city, in our experience.

which ones should we skip?
With just 6 days, you would have to plan well to include a good amount of them and definitely be prepared to drop some off.
Where do you land in Italy? Will you have a car and plan on moving accommodation every night or have a base for a day or two or for most of it?
Here are 6 days:
1. Bologna
2. Florence
-->stay in Florence and do Pisa and Lucca as a day trip from Florence
3. Lucca + Pisa
Move on to Siena/Chianti area as your base and do
4. San Gimignano + Siena <--- drive through Chianti to get to both so you can have Chianti included
and
5. Val d'Orcia includes Pienza, Montepulciano, Montalcino which can be done in a day
and
6. Cortona + Arezzo
These last two can be done as day trips from your base in/around Siena. Less moving around and just driving, without having to do check-outs/checki-ins unless you travel light and are up to moving every night around.
Volterra is the one I'd drop, as it is close to San Gimignano but not on the way to Siena -- and it isn't just a quick stop and go, I think it would be best to leave it for another time.
OK, the order can be changed if you're coming from the south and heading north, having Bologna at the end if it works better.
